Cap color varies greatly from olive greens to dark violet or purple red.
Gills white at first yellowing as spores mature then darkening to gray or brownish in age.
Stalk and flesh white at first and often with a light pink blush. Staining brown when handled or scratched.
Taste excellent when cooked,
Odor at first pleasant, developing a fish or shrimp like odor in age. Ultimately becoming unpleasant.
