of specimens in the Northern Sierra/southern Cascades, we found a fair amount of variation in bitterness, with some larger/older specimens being especially likely to be mild or even sweetish.

Are you sure it’s B. frustosus? Mushroomhobby.com says “bitter taste is unmistakeable,” but I didn’t taste any bitterness.
