The texture of this is interesting – pretty hard, but not too hard to be food. It doesn’t look very good, but of the 5 mushroom dishes served for this meal, it was the best. It appeared to be prepared by soaking in vinegar and garlic.
The photos outside were taken at a booth where they were selling edible wild mushrooms. They were probably collected near by, but not necessarily in the town of Cuajimoloyas.
The common name for this mushroom is “lengua de vaca”.
In the background you can see some Gloeophyllum mexicanum they were selling, which they said was medicinal.
