Notes: Lalvin EC-1118 yeast eating sugar in Treetop apple juice. I keep it on my water heater because it stays slightly warm there, but not too warm.
To make the wine I open the juice, pour out a cup, add a cup of sugar, a bit of yeast, then leave the cap on loosely so the CO2 can escape. After a week it stops bubbling furiously and after a month it tastes great. My favorite juice to use is “Blueberry Estate” from Trader Joes, but Treetop apple juice and mango passion fruit are also excellent.

I do not recommend fermenting at higher temperatures on top of a water heater, it tastes better when done at room temperature.
