Recognized by sight: Your last photo at least is Russula, with striate edge of the cap. An easy way to tell Russula from Lactarius is to break the stipe. If the stalk “snaps” like chalk, it is a Russula. Also, Russulas usually (but not always) have striate edges on the cap. Centrally depressed cap can also indicate Lactarius, but don’t have striate cap edges.
