These white ones are by far the most common oysters in my neck of the woods. I had assumed that cold weather made them darker in the fall and winter Haha :p

Whatever your field guides say, these are far too long-stemmed and pale to be Pleurotus ostreatus, rather Pleurotus pulmonarius (P. populinus if they grow on some kind of Populus). One of the many forms of the cultivated Pleurotus eryngii, is also a possibility.
