Thanks Michael,

I knew it had to be some kind of seed pod, but I did not suspect that it was a water plant. These were scattered on the ground in a low lying area on the shore of Piedmont lake. I guess they were deposited there by flood waters.

Turns out these are edible.

Those are Lotus seed pods, from the genus Nelumbo.
