(Truffle)

1. Strong-smelling underground mycorrhizal fungi that resemble a potato growing in broad-leaved woodlands on calcareous soils. Truffles are considered a culinary delicacy and found with the aid of trained dogs or pigs. Genera producing truffles include Tuber, Terfezia, Geopora, Peziza, Choiromyces, and Leucangium. Truffles can be cultivated. Over 200 truffle orchards are now under development in the United States alone. Black truffles produce a compound called anandamide, a chemical similar to tetrahydrocannabinol (THC).
