Slightly bitter. The pores seem to show weak blue/gray bruising in side photo and weak blue bruising in the cross section photo, I did not note this in the field.

Tylopilus violatinctus, except this species is very bitter.
It would be very surprising if there is actually any blue staining on this mushroom.
Ryan, it’s probably a digital photography artifact due to the way the uneven surface of cut flesh absorbs and reflects the light. You can see the same bluish hue on the pore surface oriented at a sharp angle relative to the camera lens.
