But I scrape the spines off before cooking them. The spines tend to fall off and coat everything in the pan, which IMO detracts from the desirability of the meal.

I saw ‘hedgehogs’ at the Stokes S.F. on Sunday. Fall is coming… I don’t think I’ve ever eaten these, and if I did it was mixed in with other mushrooms. What do they taste like?
